"Darazoo salad done in our style"

This Darazoo salad made originally by Mr. Masajiro Kojima is the most popular salad at my home now. After fixing it over and over, I've gradually come to make it in my own style.

Cook some ground chicken meat in a fry pan without oil, then add pine nuts. Cook them until the meat release all their grease and dry up, and the nuts get crisp. Add sake, soy sauce, and a little bit of MSG to taste, and sprinkle sesame seeds. Then let cool.

Put a dash of salt over thinly sliced cucumbers, wring them dry, and mix them with the cooked meat and mayonnaise.

As I tried making it
Mr. Kojima's Darazoo salad was introduced in the thirty-eighth issue "Do you know this kind of dish?". Feeling unpleasant that his wife was mixing the salad by hand, he got into an argument with her, and that was when she uttered the word "Darazoo". That's the word people use as a term of abuse in her hometown in Tottori Prefecture. According to the story behind it, the salad was so good that he obediently took his hat off to her the following day.

The salad is introduced in her own style here, but to follow the original recipe, use ground beef, and just sprinkle pepper on the cooked meat. The cucumbers should be thinly sliced without adding salt. Then mix those two items together, and dress them with soy sauce-added mayonnaise. It's really a simple salad. Plate: by Haruo Uehara
